Some things shouldn't change but simply put, the American cheeseburger deserves to be made with much better beef. If you want the best burger, you need to start with the best beef. To us, that means clean-tasting beef, with enough marbling to achieve a great sear. The one beef that fits that bill is Wagyu, the type of cow used for Kobe beef, but unlike Kobe, they are never fed anything but grass.
HiHo is the only burger restaurant that serves 100% grass-fed Wagyu beef. Grass-fed Wagyu simply tastes better. It's described as juicy, tender, and sweet, and according to a Wall Street Journal* article about the best-tasting beef, "If you should find grass-fed Wagyu, buy it."
