The inspiration for Matū was the amazing 100% grass-fed wagyu beef produced by First Light Farms in New Zealand. When it came time to select a name for the restaurant, we looked again to New Zealand. Matū is a Māori (Indigenous New Zealand) word that means "essence, the gist of the matter, richness" and is pronounced 'mah-too' (equal emphasis on both syllables and an elongated "u" at the end).
